Appellation Healdsburg opened in fall 2025 as the long-anticipated debut property of Appellation Hotels — a hospitality concept founded by chef Charlie Palmer and legendary hotelier Christopher Hunsberger that places culinary experience at the center of every operational decision. The hotel sits just outside downtown Healdsburg and is connected to Montage Healdsburg via a short trail, allowing guests of either property to walk between the two for dinner. Rooms are designed with rare functional intention — ample storage, thoughtful detail, and showers configured so guests can turn them on without getting wet.
The culinary program is what distinguishes Appellation. Every stay includes breakfast, and both guests and non-guests dine at the on-site restaurant. The breezy front porch is a popular spot for happy hour cocktails. Programming includes hands-on cooking experiences, winemaker visits, and partnerships with Sonoma's most celebrated producers — making the property feel less like a hotel with a restaurant and more like a culinary residency. Charlie Palmer's expertise informs the entire concept rather than living only within the kitchen.

Christopher Hunsberger co-founded Appellation with Charlie Palmer in 2018 after more than 30 years at Four Seasons Hotels and Resorts, where he served as President of the Americas and global Chief Human Resources Officer. As COO, he runs the operational backbone of the brand and lives in Healdsburg himself — a reason the flagship feels rooted in the town rather than imported into it.
