Reed Palmer runs the open kitchen at Appellation Healdsburg, cooking over a live-fire grill and wood hearth with Sonoma County produce. Dinner Wednesday through Sunday is an $85 three-course prix fixe, or the six-course Folia Tasting, written each night and paired by sommelier Tess Housholder: grilled Hog Island oysters, black cod cioppino, 'nduja croquettes. The patio sits among olive trees.

Folia Bar & Kitchen is the main dining room of Appellation Healdsburg, the culinary-focused hotel co-owned by chef Charlie Palmer on eight and a half acres in Healdsburg. It is Palmer's second hospitality venture in town, after Hotel Healdsburg, and the kitchen is led by his son, Reed Palmer. The room opens off the hotel's light-filled lobby and centers on a sweeping open kitchen, where a live-fire grill and wood-fired hearth drive an ember-cooking style built on Sonoma County produce. The name nods to foliage, to the Palmer culinary portfolio and to the Latin root for a single sheet of paper, a quiet metaphor for a menu that is rewritten as the seasons turn. It is a young kitchen, open only since the fall of 2025, and already cooking with a voice of its own.

Reed Palmer runs the open kitchen at Folia Bar & Kitchen at Appellation Healdsburg. A graduate of Cornell's hospitality program and the Culinary Institute of America, he cooked at Blue Hill at Stone Barns and One White Street and staged at Amass in Copenhagen. His menus lean on open flame, fermentation and pickling, built with local growers.

Thomas Bellec is chief culinary director of Appellation, the hotel group co-founded by chef Charlie Palmer, overseeing the kitchens at Appellation Healdsburg, home of Folia Bar & Kitchen. French-trained, he spent two decades with Four Seasons, including Hualalai, the Beverly Wilshire and Toronto, then led the kitchens at Bricoleur Vineyards. He was named a Maître Cuisinier de France in 2014.
