Santé is the dining room of the Fairmont Sonoma Mission Inn & Spa in Boyes Hot Springs, reopened in 2026 with California-French cooking. Chef de Cuisine Jennifer Venezio sources mostly within 100 miles for dishes like Dungeness crab spaghetti and bouillabaisse, plus a four-course tasting at $110. Sonoma and Napa wines fill the list, and breakfast is served daily.

Santé is the signature restaurant of the Fairmont Sonoma Mission Inn & Spa, the resort built around the area's historic mineral springs in Boyes Hot Springs. After a complete redo, the dining room relaunched in 2026 with a refined California-French concept: approachable, Mediterranean-inflected cooking rooted in the bounty of Sonoma Valley. Much of the menu is sourced within 100 miles, from organic farms and foraged herbs to sustainably caught seafood, and the kitchen leans on fermentation, house-made miso and sourdough. Chef de Cuisine Jennifer Venezio leads the kitchen, and her four-course chef's tasting at $110 is the kind of dinner guests plan an evening around, whether they are staying at the inn or driving over for the night.

Jennifer Venezio leads the kitchen of Santé through its 2026 relaunch at the Fairmont Sonoma Mission Inn. She pairs classical French technique with Wine Country ingredients, leaning on fermentation, house-made miso and sourdough that echo the Inn's heritage as the birthplace of American spa cuisine, and builds a Sonoma coast bouillabaisse on sustainably sourced seafood.

Brice Giannotti runs both Santé and 38 North, the restaurant and bar of the Fairmont Sonoma Mission Inn & Spa, a post he took up shortly before the 2026 relaunch. He brings two decades in luxury hospitality, dining and beverage programming, and started on the kitchen side as executive chef at Lucca Bar & Grill.
