Mark and Terri Stark's steakhouse fills a Railroad Square building where Santa Rosa has dined since 1967. Mark Stark picks the beef himself, from a 28-day dry-aged bone-in ribeye to hickory smoked prime rib and filet mignon, with toppers priced à la carte. Lobster a la plancha and chilled oysters cover the sea, and the Lounge pours sixty-plus whiskeys.

Stark's Steak and Seafood is the flagship of Mark and Terri Stark, the restaurateurs behind several well-known Santa Rosa rooms. They bought the landmark building on Adams Street in Railroad Square in December 2006, opened Stark's Steakhouse in January 2008 after a full renovation, and renamed it Stark's Steak and Seafood in the fall of 2011 as the seafood side of the menu grew. The building has a long life as a restaurant: it was home to Michele's Italian Restaurant from 1967 to 2006, so Santa Rosa has been sitting down to dinner here for nearly sixty years. Mark Stark, the executive chef, selects all of the beef himself, from Certified Angus to American Kobe and Certified Piedmontese. The result is a modern steakhouse in an old Santa Rosa setting, polished but not stiff.

Mark Stark trained at the Culinary Institute of America and cooked in Washington, D.C., and Seattle, then worked as a regional chef for the California Cafe Restaurant Group before opening Willi's Wine Bar with Terri Stark in 2002. He leads the kitchens across their Stark Reality group, and the Starks were 2013 James Beard semifinalists for Outstanding Restaurateur.

Terri Stark built Stark Reality Restaurants with chef Mark Stark and handles front-of-house operations across the group's Sonoma County restaurants, from the Railroad Square chophouse to Willi's Wine Bar. She studied hospitality at the University of Oregon and managed catering for the California Cafe Restaurant Group in Palo Alto before the Starks opened their own rooms.
