Stéphane Saint Louis cooks a tasting menu only, five or seven courses, for seventeen seats on Petaluma Boulevard South. Classical French technique meets West County produce in courses like duck breast with persimmon and a Wellington with its jus, with the cooks working steps from the tables. The Michelin Guide added it to its California selection in 2025.

Table Culture Provisions is a seventeen-seat dining room on Petaluma Boulevard South, run by chef Stéphane Saint Louis with chef and co-owner Steven Vargas and business partner Marta Saint Louis. Open since the start of the decade, it is still a young kitchen, and it serves fine dining by tasting menu only. Saint Louis calls it his happy place, and the intimacy shows: the cooks work steps from the tables, and the pace of the evening is set by conversation as much as by the courses. In spring 2025 the Michelin Guide added Table Culture Provisions to its California selection, recognition the team had long worked toward. For downtown Petaluma, it marked the arrival of a dining room that people now plan a trip around.

Dinner is a set progression of five or seven courses, so the only real decision is how long an evening to settle in for. Saint Louis cooks with classical French technique and builds each menu around West County and Petaluma produce, changing the courses with the season. Because the room is so small, the evening feels closer to a dinner party than a night out, and it rewards guests who arrive unhurried and curious. The wine and cocktail lists are chosen to follow the food rather than compete with it. Service runs Wednesday through Saturday from 5 p.m., and tables are limited, so reserve well ahead. For a more casual taste of the team's cooking, Bijou, the à la carte restaurant they opened in Petaluma in 2025, keeps a different rhythm.
