A sourdough bakery and sandwich shop by day, Troubadour turns after dark into a California-French dinner room that earned its first Michelin star in 2026. Owners Sean and Melissa McGaughey, both SingleThread alumni, cook precise, produce-driven courses from a compact kitchen on Healdsburg Avenue, and Melissa's pastry background carries through to dessert.

Troubadour Bread & Bistro is the second Healdsburg venture from Sean and Melissa McGaughey, who both came from SingleThread: he spent six years as its chef de cuisine, and she worked as its pastry chef. In 2020 they opened Quail & Condor, a bakery they first tested at the Healdsburg Farmers Market, and Troubadour followed on Healdsburg Avenue as something harder to categorize. McGaughey, a former punk-rock drummer turned fine-dining chef, puts it simply: a boulangerie in the morning, a sandwich shop by day and a fine-dining restaurant at night. The couple spent the first years refining that double life from a kitchen barely large enough for three cooks. In June 2026 the Michelin Guide awarded Troubadour its first star at the California ceremony in San Diego, a remarkable result for so small a room.

Sean McGaughey runs Troubadour Bread & Bistro in Healdsburg with Melissa McGaughey as a bakery and sandwich shop by day and a California-French tasting room by night. A former chef de cuisine at SingleThread under Kyle Connaughton, he builds menus around the day's produce, and the two also run Quail & Condor bakery.

Melissa McGaughey is co-owner of Troubadour Bread & Bistro in Healdsburg, where long-fermented sourdough and pastries start the day before the room turns to a Michelin-starred tasting menu at night. She came from the pastry kitchen at SingleThread and, with Sean McGaughey, also founded Quail & Condor, the Healdsburg bakery that came before Troubadour.
