Aesthete is a contemporary Sonoma label built around Bennett Valley Syrah and Pinot Noir, owned by Sonoma County native Jeff Jones and crafted by Jesse Katz of Aperture Cellars. The cool, long growing season of Bennett Valley produces a Syrah profile more reminiscent of Crozes-Hermitage than California — pepper, olive, dark fruit, and firm tannin — and Katz's winemaking brings a modern, polished precision to it. A serious, underrated producer championing one of Sonoma's most underappreciated varietals, now open to the public at a creekside farm in Healdsburg.

Founded in 2016 by Sonoma natives Jeff and Hilary Jones with acclaimed winemaker Jesse Katz, Aesthete makes ultra-limited single-vineyard wines (100–200 cases per varietal) from the renowned Dry Stack Vineyard in Bennett Valley, with a tasting room beside Dry Creek in Healdsburg.

Aesthete was founded in 2016 by Sonoma County native Jeff Jones — who had acquired the acclaimed Dry Stack Vineyard in Bennett Valley in 2013 — with winemaking directed by Jesse Katz of Aperture Cellars. Jones and his brother Peter built a cult following alongside Katz, selling top-scoring, ultra-limited single-vineyard wines (Syrah, Pinot Noir, and a barrel-aged Sauvignon Blanc) directly to an exclusive member list for nearly a decade. In 2024 Jones acquired the label's Dry Creek Valley home — the former Truett-Hurst property at 5610 Dry Creek Road, complete with a rescue herd of goats, an organic farm, and creekside tasting along Dry Creek — opening the once members-only label to the public for the first time. The style is modern and site-driven, designed to showcase how cool-climate Bennett Valley fruit can hold up to more opulent California expressions of the same varieties.

A Fresno State Viticulture & Enology graduate who built his reputation through 24+ harvests at Pétrus, Screaming Eagle, Robert Foley, Viña Cobos, and Bodega Noemia before becoming the youngest head winemaker in the U.S. at Lancaster Estate in 2010 — where he grew the Roth Estate brand by more than 800% and built its facility from the ground up. He founded Aperture Cellars in 2009 with his father, photographer Andy Katz, and acquired the Healdsburg estate in 2016. Named Wine Enthusiast's 2025 Winemaker of the Year, he was the first winemaker ever included on Forbes 30 Under 30 and has accumulated 17+ 100-point scores across five major critics. At Aesthete, Katz brings the same site-driven precision to Bennett Valley Syrah, drawing a profile closer to Crozes-Hermitage — pepper, olive, dark fruit, firm tannin — than the warmer California archetype.
